This is among the best of this style of knife
I will go through the pros and the cons of this purchase and provide some background as to what brought it about.I have some of the 440A stainless versions of this knife in different brands (as well as the one described as a "santoku" which is a bit of a stretch). The 440A knives work fine. But the steel is soft and they require regular (more than I'd like) honing. Normally I wouldn't care, but as these are travel knives for cabins, cottages, tent camping and vacation rentals, I don't want to carry honing steel or ceramic. So I got this because of the 8CR14MOV steel. I would note it is an upgrade for my 440A knives. I don't want to pretend to understand metallurgy, but it seems to get a little sharper and stay sharper longer to me. If I rated the 440A knives a 6 or so, I would rate this an 8.Otherwise it's almost identical in form (there's a slightly different cut on the END of the blade on the dull side, which is a little more sweeping and less rounded). Otherwise, no differences except for the blue slabs on the handle. So with that...Pros:- Very serviceable steel. Gets sharp, stays sharp acceptably long and works great for my kitchen use. I have kitchen knives with better steel, but they don't fold and fit into a backpack in a form that's five inches or so long. Among the BUDGET kitchen folders I have tried, this is at the top.- I got the blue handled knife to make it stand out from the others without my having to examine it. If beauty matters to you (It's a nice bonus, but not necessary to me), this thing is really nicely finished and well done. The wood grain is very evident and the blue handle is attractive.- Speaking to all of these knives, the form factor is great. It's a little chunky from a weight standpoint, but it folds up, locks up well and the blade is a great shape for getting slices, even very thin ones. Works great for slicing meats and vegetables. It CAN chop decently, but that's not its sweet spot.Now the cons:- As with all knives of this type, the ergonomics are not amazing. It's not a knife you want to spend all day in the kitchen with. It's for prep work and it excels at being packable and useful when the time comes. With the folding mechanism (the liner lock) and the open space and exposed steel in the handle, it's not like holding a knife with a textured or rubberized finish. It digs into your hand in certain moments, but that said, I find it perfectly acceptable for doing 30 minutes or so of kitchen prep. These ergonomic issues are not specific to THIS knife, but to almost every knife of this type. I also have learned to adjust to make it more comfortable, so this is really just something I want to note. Don't replace your kitchen knives with this, but understand it's very packable and convenient for travel (or for the camper kitchen).- Some of my other knives came with a nifty little storage bag that helps protect the knife's finish and handle. This one does not. It does come in a nice box with a foam insert, but I would prefer a bag to a perishable (albeit strong) cardboard box.So considering what this knife is supposed to do and why I bought it, it's exactly what I wanted and beautiful besides. It's a worthwhile purchase at its tremendous price point.
